Is there a page on the wiki that describes crafting item base types with some examples?

What sort of items counts as "cloth" vs "stuffing" as their base types?

For "stuffing": What would count here? Do the "patches of fur" you can buy at the Tanning Yard count? What about things like the "bolt of wool" sold at the Loomis Loom? (I was interpreting the latter more as a cloth base)

For "cloth": Are the bolts of wool and sheets of linen sold at the Loom the main satisfying product here, for now? I am assuming that eventually weavers can harvest fabrics on their own and spin them, but I wasn't sure what existed today.

I think the only type of stuffing in-game right now is straw... Which you can forage at a stable for now, unfortunately there isn't another type currently in-game! At some point probably downy feathers or wool fluff or cotton fluff or something would work. Cloth is fabric you can buy at the loom. Scrap furs are sort of an animal skinning product and not really just the hair but more like a pelt.
